Chipotle Mango Beef & Veggie Shish Kababs

Ingredients

2 lbs beef (filet mignon or any lean cut, cut into 3/4 to 1-inch pieces)
1 lb vegetables (bell peppers, onions, zucchini, tomatoes, whatever you have on hand that can be cut into 1-inch pieces and skewered)
3/4 cup Chipotle Infused extra virgin olive oil
1/2 cup Mango White Balsamic vinegar condimento
3 garlic cloves, minced (or just shy of 1/2 tsp. garlic powder)
3 tsp. lime juice
1 tsp. Himalayan sea salt
1/2 tsp. ground black pepper
Crushed red pepper (optional)
Cilantro (optional)

Directions

Combine olive oil, vinegar, garlic, lemon juice, salt and pepper. Reserve 1/4 cup. Cut beef into 1-inch pieces and submerge in marinade. Refrigerate for 30 minutes to 2 hours. Heat grill to medium-high. Alternate beef and vegetable pieces on skewers and brush with reserved marinade. Place skewers on the grill and turn every 5-7 minutes until cooked to desired doneness. Finish with a pinch of crushed red pepper and/or fresh cilantro.ENJOY!
