Homemade Aïoli

Ingredients:

Blue Olive extra-virgin, varietal oil

Pinch of Blue Olive Himalayan Salt 

Two cloves garlic- mashed/puréed

One egg yolk

Squeeze of fresh lemon juice

 

The key here is to use a high polyphonic oil that is super pungent and strong. Using a seed oil or even store bought EVOOs that don’t meet high standards will not give you the abundance of flavor or anti-oxidant properties that our EVOOs provide.
